Eggless Veggie Omelette

Who says omelettes have to be made with eggs? Not me because I found this recipe for a tomato omelette and adjusted it to fit our taste. The end product is supposed to have the look of a puda and taste of bhajiyas so I guess you can play around with the ingredients.

1 cup besan or chickpea flour
1/4 tsp cooking soda or baking soda
1/2 tomato, finely chopped
1/2 onion, finely chopped
1/2 green bell pepper, finely chopped
1 green chili, finely chopped
1 tsp red chili powder
1/2 tsp coriander powder
1/2 tsp cumin powd
1/2 tsp sesame seeds (optional)
1/4 tsp turmeric powder
Salt to taste
3 tsp oil

1. Mix all of the above ingredients to form a medium thick batter. May have to add a bit of water to get batter to preferred consistency.
2. Heat up a skillet and smear it with oil. Pour a ladleful or two of the batter on the skillet and cook one side.
3. When it is cooked, turn over and drizzle the other side with one tsp of oil.
4. Serve hot with ketchup or chutney of your choice.

I have not honed in on my dosa making skills yet, so I did not properly spread the batter out to form a thin puda. Otherwise,
we both enjoyed the flavor so I have to say this one is definitely a keeper!
