Masala Uttapam

The last time we ate uttapam, we did not like it, so I thought we had marked it off of our list for good. The main reason being that it tasted bland. Then, I thought up of an idea to add masala to the flour to add some flavor. I guess you could say the end result was similar to the "Tomato Omelette" I made earlier this week. The only difference is that the tomato omelette is based from chickpea flour and this uttapam is made from rice and maida flour. It would have turned out perfect if I can learn how to make thinner, rounder dosa-like uttapams. Instead, I made small mini-uttapams. We sacrificed on appearance, but they tasted great, though!

1/2 onion, chopped finely
1/2 tomato, chopped finely
2 green chilies, chopped
1/2 cup uttapam flour (ready made, out of packet)
1 cup water
1 tsp red chili powder
1 tsp ginger, grated
1 tsp coriander powder
1/4 tsp turmeric
1/2 tsp cumin powder
Salt per taste

1. Mix the dry spices with the flour. Add in the chopped veggies and mix together. Then slowly add in the water and mix batter. Let sit for about 10 minutes.
2. Heat up the griddle. Drizzle about 1 tsp of oil around the griddle and pour a ladleful of the batter on the griddle. Spread evenly in circular motion. Make sure you have the flame on medium-low heat.
3. Pour a few drops of oil on the top side. Once one side is golden brown and crisp, turn over and repeat for that side. You do not have to add oil again.
4. Once both sides are crisp, serve hot with yogurt or chutney. Onion raita would be good with this. We will try it with onion raita next time around.
