Eager to try something new and different with paneer, I tried this recipe for paneer bhurji, which is crumbled paneer in tomato gravy.
1 block paneer, crumbled (kind of like feta cheese) [One block is 200 gm.]
1 onion, chopped lengthwise
1 bell pepper, chopped lengthwise
1 tsp ginger paste
1 tsp garlic paste
1 tsp chopped green chillies, chopped lengthwise
2 small tomatoes, chopped
4-5 cashewnuts, broken into small pieces
1/2 tsp garam masala powder
1 tbsp paneer masala powder
1 tsp tandoori powder
1 tsp red chili powder
1/2 tsp turmeric powder
1/2 tsp sugar
Salt to taste
1/2 tsp lemon juice
2 tbsp oil/ghee
Chopped cilantro for garnish
1. Heat oil/ghee in saucepan. When hot, add the ginger-garlic paste and fry for one minute.
2. Then add the onions, cashewnuts, slit green chilies, and chopped bell peppers and cook until soft.
3. Next add the chopped tomatoes, followed by all of the dry powders (turmeric, garam masala, red chili powder, tandoori powder, paneer masala powder, salt and sugar). Mix well, close lid and let cook until oil starts coming out on sides of pan.
4. Add in the crumbled paneer and lemon juice. Be sure to mix well so that all the paneer pieces are evenly coated with spices. Cook for only 2-3 minutes and remove form heat.
5. Garnish with chopped cilantro and serve hot with paratha.
