Spicy Potatoes
I love potatoes, even though they are nothing but carbs! Everyone that knows me, knows that I used to order french fries every time we went out to eat at a restaurant. For a little while there, that was all that I ate. Now I have definitely learned to think outside the box. Bhavnesh loves potatoes as well, so we make the perfect match!
4 potatoes, washed, peeled and cubed
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp fennel seeds
1/2 tsp turmeric powder
Pinch of asafoetida powder
1 tbsp red chili powder
1 tbsp coriander powder
Salt to taste
Chopped cilantro for garnish
Shredded coconut for garnish
1. Heat oil in nonstick skillet. When hot, add the mustard seeds. When they start popping, add in the cumin and fennel seeds.
2. Once they start crackling, add in the asafoetida powder, turmeric and potatoes.
3. Add salt and mix well. Close lid and let cook for 3-4 minutes.
4. Open potatoes and mix again. Reduce heat and keep potatoes covered until half done.
5. Then open lid and allow to cook open. Once potatoes are fully cooked, add the coriander powder and red chili powder and mix well.
6. Garnish with chopped cilantro and shredded coconut and serve hot.
Tastes great with dhal and rice!
