Baked Beans Update

I made baked beans again this morning for breakfast. I was really excited to be coming home because I woke up a whole 20 minutes before I usually do. I also knew I was going to be making baked beans, and I wanted to give myself enough time to cook the tomatoes. Last time I made baked beans, I pressure cooked the tomatoes for just a little over 5 minutes. It tasted fine, but I wanted to try harder this time.

This time I pressure cooked for a whole 20 minutes, and you could tell the difference. The baked beans were tasting really good. Imagine the possibilities if you gave the tomatoes 30-45 minutes! I will try that next time to see if it gets even better than this! Here's the recipe yet again:

1 can of whole tomatoes
1 can of Heinz baked beans
4 garlic cloves, crushed
1 onion, chopped
1/2 tsp cumin powder
1/2 tsp red chili powder
1 tsp sugar (or to taste depending on how tangy the tomatoes are)
Salt to taste
Chopped cilantro for garnish

1. Drain the can of baked beans and wash out the tomato sauce from the beans. We want to cleanse the beans and make our own sauce!
2. Puree the canned whole tomatoes and keep aside.
3. Heat oil in pressure cooker. Add the chopped onions and crushed garlic and sautee for a few minutes until onions are glossy. I reduced the heat to low so that the garlic would not burn while I tried to multi task.
4. Add the pureed tomatoes along with the cumin powder, salt, red chili powder and sugar. Increase heat back to high, close pressure cooker lid and let it go for 20-30 minutes. [Note: I added 1/4 tsp sugar first, tasted and then added more sugar. Be sure to taste before serving so that you put the right amount of sugar.]
5. Once pressure is fully released, open lid and add the baked beans. Simmer on low heat for 5 more minutes. Garnish with chopped cilantro and serve hot with two slices of toast (whole wheat, if possible.)

While the beans are simmering, toast a few slices of bread and you are done! See, that was easy and it was tasting mighty delicious. Overall, baked beans is a pretty filling breakfast, and keeps you energized throughout the day.
