This recipe is quick and easy for times when you want to whip something up in a matter of minutes. It requires little effort, but tastes delicious!
2 flour tortillas
1/2 onion, chopped finely*
1/2 green bell pepper, chopped finely*
1 small Roma tomato, chopped finely*
2 tbsp marinated jalapeno peppers, chopped finely*
Mounds of cheeeeessee
Few tbsp of Salsa
1. Drizzle 1 tsp of oil around in griddle. Lay one tortilla down on griddle. Lather it with salsa.
2. Then layer with cheese, freshly chopped veggies, a few dollops more of salsa, and finally a little bit more cheese.
3. Lay the other tortilla on top. When the bottom side is golden brown, turn over to cook other side.
Serve hot with sides of Spanish rice, sour cream, salsa and even guacemole. Enjoy!
* Alternatively, you could sautee the chopped veggies in a little bit of oil and then add to quesadilla.
