I did not grow up eating mushrooms. In fact, when we were younger, my grandmother used to tell us that mushrooms are "meat" so we never even touched it. Then, we grew up and stepped out into the real world. Only then did we realize that the mushroom is really a vegetable and actually healthy for you. Since I have that image attached to it, I do not really prefer eating them. If it is cooked and hidden, I might not mind, but I would never eat it raw or in plain sight (like on a pizza)! Call me crazy! After we had the delicious pizza over the weekend, I am open to trying new things so no more hidden fears of the mushroom. In fact, it's going to be the star of today's breakfast dish. Here's the recipe.
1 pound plain white mushrooms
2-3 tbsp olive oil
1 onion, chopped finely
4-5 garlic cloves, crushed
1/2 tsp red chili powder
1/2 tsp Italian seasoning (optional)
Salt to taste
1 tbsp chopped cilantro
1. I used packaged mushrooms. Before you get started, wipe them down with a damp paper towel. Then chop them or quarter them.
2. Heat olive oil in skillet. Add the garlic and sautee for 30 seconds. Then add the onions and sautee until golden brown.
3. Next, add the mushrooms, red chili powder, Italian seasoning (if using) and salt. The mushrooms will not take that long at all to cook, maybe 3-4 minutes.
5. Garnish with chopped cilantro and serve hot over toast.
You can also add chopped bell peppers in step 3 if you like. We ate these sauteed mushrooms over toast with Bhavnesh's homemade Piri Piri sauce, and it was very delicious. This dish will be appearing many times on the table for breakfast not only because it tastes great but also because it can be whipped up in a matter of minutes. Pretty cool!
