Well, we had plenty leftover and I thought I would be forced to throw it away. Then, Bhavnesh had this AWESOME idea to turn it into a soup. Here's how he did it:
Leftover lentil curry
1/2 cup water or enough for whichever consistency you prefer
1/2 tsp crushed garlic
1 green chili, slit into pieces
1 tbsp oil
1. Blend the curry up as it is with 1/2 cup of water and remove into serving bowl.
2. Next, heat up oil in small pot. Add the crushed garlic and a few slit green chilies to the oil.
3. Garnish the lentil soup with the garlic infused oil and serve hot.
Many people do not realize this but your basic lentil curries make great soups! This tasted so good that it would make a wonderful appetizer if you were entertaining. Serve with grilled parathas or simple bread or crackers. I think we caught on to something extraordinary!
Oh, and we still have lentil curry leftover. I told you I make enough to feed an army! I definitely need to work on my measurement skills.
So, we ate the leftover curry as a soup the next morning for brunch. This time, instead of garlic infused oil, we infused oil with Tobasco mild garlic flavored hot sauce. It tasted just as great as yesterday's. This is going to start being served as an appetizer very soon!
