Southwest Dip
This recipe was one given to me by my sister. She made it once and it was a hit with our family. I tried it out for myself this weekend, and it turned out pretty good. The measurements are tweeked a little bit from her recipe because I was working with what was in our cupboard. It's perfect for entertaining- especially during NFL season!! Here you go ...
8 oz tub of cream cheese
1 can of black beans
1 small jar of roasted red bell pepper
1/2 packet of taco seasoning
1 tsp lemon juice
2 tbsp cilantro
1/2 tsp red chili powder
Salt to taste
1. Drop the can of black beans in colander and rinse under water. Drain completely.
2. Drain the oil out of the jar of roasted red bell pepper as well and keep aside.
3. Grind up the black beans first in food processor. Then add the roasted red bell pepper and process both together.
4. Next, add the salt, red chili powder, taco seasoning, lemon juice and cilantro and process again.
5. Finally, add the cream cheese and process for the last time.
6. Remove into serving bowl and serve immediately or refrigerate until game time. [If you do refrigerate, remember to take out of fridge atleast 30 minutes before serving.]
See, it's quick and easy. Tastes great with chips so enjoy!!
