Nutty Carrot & Spinach Asian Salad
3-4 carrots, peeled
1 cup spinach, chopped
1 tbsp sesame seeds
For the homemade Asian dressing, you will need:
3 tsp flaxseed oil
2 tsp soya sauce
1 tsp vinegar
1/2 tsp mustard
Black pepper to taste
1/4 tsp ginger paste
1. Toast the sesame seeds in pan and keep aside. Keep an eye on it because it will toast in just a few minutes.
2. Mix the dressing ingredients together and keep aside.
3. Peel the skin off of the carrots. Continue peeling the carrots into long thin strips in a bowl. To carrots, add the chopped spinach. Dress your salad with the Asian dressing.
4. When ready to serve, garnish with the toasted sesame seeds.
Tihs one is another one of my hubby's creations. He made it once and we both loved it so it remains as a favorite, appearing atleast once a week on our dinner table.
