When we were in India, we had Maggi chatpat sauce, which is basically a tomato based chutney that is best enjoyed with chaats (snacks). I was making Thai red curry a few days ago and stumbled upon this recipe. It turned out as an excellent condiment with pizzas, sandwiches and many other things. Here is how I made it ...
1 medium onion, diced
15 finger length dry red chillies
1 tsp ginger paste
1 tsp garlic paste
1 cup chopped cilantro
½ tbsp brown sugar
2 tbsp lemon juice
1 tsp salt
Pinch of black pepper
1/2 tsp coriander powder
1/2 tsp cumin powder
1. Soak the chilies in warm water for about an hour.
2. Drain the chilies and reserve the spicy water.
3. Process all of the above ingredients adding about 2-3 tbsp of the reserved water.
4. Serve spicy chatpat sauce with almost anything you would eat hot sauce with.
Brace yourself because it is pretty spicy. Enjoy!
