I don't think I have ever had upma before, and I have been finding alot of different variations to upma, so here is this one that I found:
1/2 cup rava or soji
1 cup water
1/2 eggplant, diced small
1/2 onion, diced small
1/2 tsp red pepper
1 tsp sambhar powder
1/2 tsp salt
1/2 tsp sugar
1 tsp mustard seeds
1 tsp cumin seeds
Pinch of turmeric powder
Pinch of asafoetida powder
1. Heat oil in pan and throw in the mustard seeds and cumin seeds. Once they fully splutter, sautee the onions and eggplant for a few minutes.
2. Next add the turmeric and asafoetida powders, sugar, salt, red chilli pepper, and sambhar powder. Mix together.
3. Then, slowly add the rava/soji and water. Keep mixing so that no lumps form.
4. Soji is done when all the water dissolves. I would have also added lemon juice and cilantro, but we didnt't have any.
5. Serve hot and enjoy!
