I bought a fresh bunch of cilantro from the market the other day. In India, the bunches are so big that you really cannot use it all before it goes bad. So, when I do buy the cilantro, I make a point of whipping up some green chutney with it. It's great as a sandwich bread (like on the kidney bean burgers!), and I even add it to raita and homemade salsa. It's a staple for sure.
9-10 green or red chilies
5-6 garlic cloves
2-3 tbsp EVOO
1/4 tsp asafoetida powder
1/2 lemon, juiced
Salt to taste
1 cup chopped cilantro
All you do is grind the above ingredients in a food processor. Add a bit of water to loosen the chutney up to your liking, and that's it! You can definitely taste the EVOO from it, and it adds a delicious flavor to the chutney, as opposed to using regular oil.
