Cilantro chutney (also known as Coriander Chutney or Hari Chutney) is considered a staple in most Indian households. It is served with pizza, khaman dhokla, and pakoras and can also be used as a dipping sauce, sandwich spread, dressing or as garnish for most chaats.
One Bunch of cilantro
6 green chilies (or 3 jalapeno peppers)
1" piece ginger
1 tsp sugar
1.5 tsp salt
1 tsp oil
Pinch of asafoetida powder
1 tsp cumin seeds
3 tbsp lemon juice
3 tbsp water
1. Blend all of the above ingredients together except for the cilantro for about 30 seconds in food processor.
2. Then add in the cilantro a little at a time. Blend together for about a minute.
3. If mixture is still dry, add a few tsp water.
For dipping sauce: Mix together 1/2 portion of yogurt with 1/2 portion of cilantro chutney.
For sandwich spread: Mix together 2 tbsp cream cheese with 1 tbsp cilantro chutney.
For the salad dressing: Mix together 2 tsp oil, 1 tsp vinegar, and 1 tsp cilantro chutney
I add it to my pasta sauce and it compliments it very well. Just like most other chutneys, you can also make it in bulk and freeze it for later use.
