Aloo-Mattar Soya Curry

Regardless of whether I have a liking for soya, it is healthy for you. There is no denying that. So, I guess it doesn't hurt adding soya to our diet, every once in a while. I was going to make Mattar Soya today. Since I have several potatoes hanging around, I added "aloo" to the pot and made this creation for dinner tonight. I've made Aloo Mattar before, and I've made Aloo Soya before. Here's a mixture of the two ...

1 cup Nutrela soya nuggets, already ground
1/2 cup green peas
2 potatoes, boiled then peeled and chopped
1/2 tsp cumin seeds
Pinch of asafoetida powder
1 tbsp ginger-garlic-green chili paste
1 onion, chopped
2 tomatoes, chopped
1/4 tsp turmeric powder
1/2 tsp red chili powder
1/2 tsp coriander powder
1/4 tsp garam masala (optional)
1 tsp paneer masala
1 lemon, juiced
1/2 tsp sugar
Salt to taste
2 tbsp chopped cilantro

1. Boil the potato. Then peel and chop into small pieces.
2. Soak the ground soya nuggets in boiled salted water for 5 minutes. Keep aside while you prepare the gravy.
3. Heat oil in pan. Add the cumin seeds. Once they begin crackling, add the asafoetida powder and ginger-garlic-green chili paste. SAutee for 30 seconds. Then add onions and sautee onions until they become soft and translucent.
4. Next add the tomatoes, turmeric powder, red chili powder, coriander powder paneer masala and garam masala (if using). Let tomatoes cook on medium to low heat for 5-10 minutes.
5. Add the boiled potatoes, green peas, sugar and salt to pan.
6. Drain the water out of the soya and add soya to pan. Let it all come to a boil for 5 minutes.
7. Garnish with lemon juice and chopped cilantro and serve hot with roti/paratha.

I served this Aloo-Mattar Soya Curry with rotis and a side of cool, seasoned bell pepper raita for dinner tonight. It's a pretty healthy and nutritious meal.
