The classic green chutney, or cilantro-chili chutney that I make requires just a few simple ingredients.
1 cup cilantro, roughly chopped
2 jalapenos, cored and roughly chopped
1/2 tsp garlic paste
1/2 tsp green chili paste, only if you need more kick
Salt to taste
1 tbsp oil
Splash of water
Process all of the above, except the water, in a small food processor. Add the splash of water at the end and pulse again. Refrigerated chutney is good up to one week.
Enjoy this chutney in your favorite sandwiches (See Vada Pav) and chaats (Bhel, Bhel Puri, Ragda Patties). It also tastes great spread on top of pizzas!
